I didn't like the way Barristan went out either. But I can pretty much deal with it.

Because to me, Barristan Selmy was always kind of more of an ideal or maybe avatar (I'm going blank on the right word) or actually two.

First, to me, he represented first the ideal of the knight (just watched the episode where he stands vigil for the young knight killed by the Mountain in jousting because the guy had no one else). And as such was someone who was kind of out of place in the cynical world that actually exists but held his head high. But we already have Brienne for that role - even though she's not technically a knight. And we had Ned Stark for that role a short time as well.

And 2nd he was useful as a wise adviser to Daenerys, especially in Westerosi matters. But he had to be moved so that Tyrion could fill that role.
