They also had the sense to get off Dorne. Look at the ratings for Dorne episodes. They saw the same thing you did.
Martin didn't introduce Dorne until late so they had no real sense of where to go with it.

I had high high hopes for Dorne after they nailed the casting of Oberyn.
Then not even giving us Quentin or Arianne. I think a lot of people would have gotten behind Arianne's motivations easily and she would have been a much better main focus in Dorne. Then giving us three sand skanks who had to be some of the worst actors they could have possibly cast.
