Natural Bridge Caverns is pretty cool for a few hours. Between SA and New Braunfels.
If your wife likes to shop, San Marcos is outlet mall heaven.
From Wimberly, about an hour west is the LBJ Ranch / State Park. Really cool if you like historical stuff.
Just a tad further west is Luckenbach Texas, and then Fredericksburg, which has a cool WWII museum and some great German food.
Also that whole area is part of the Texas Wine Country, so there are all sorts of little wineries out there.
If you are going to go to Waco, go a bit further north to West, which is home of the Czech Stop, an amazing bakery with the best kolaches in the state.
Finally, if your wife will let you, hit up the Shiner brewery.
