August 5-12.
It's lobster season so try to go dive for lobsters.

The keys doesn't have beaches like destin( from my experience) so don't expect that.

I'm lucky and go with a friend who has a house and a boat. We spent the entire day on the water, every day. And it was amazing. Snorkeling, fishing, spear fishing, lobster diving. I wouldn't want to go to the keys and not have a boat at the ready.

We went to key west for one day and I wasn't impressed.

I tell everyone that's curious that if you want a relaxing beach trip you are better off going to destin. If you are ready to spend all day every day on the water snorkeling fishing etc and willing to spend a bunch of money then go to the keys.
