Go to St Joe your first or second day. Mexico beach is like the beach, the cape is a peninsula as you know. The bay is completely different from the beach, it's a legit bay with all kinds of wildlife. They get a good bit of triple tail in that area so if you see anything floating be ready with a live shrimp or imitation lure.
It should also be scallop season. You may want to check that out. I haven't seen the dates yet but it usually starts the first of july.
