as the other say, that fishy taste is fat that you are tasting. try to get smaller fish and be sure to trim them very well and it will be minimized. I had some large fillets a while back and there was a full 1/4" of fat over the whole outside of the fillet.

just so ya know, that fishy taste also indicates that the healthy elements of the fish are present.
