I understand. It's the same thing in a condensed timeline. Until the brewer produces enough beer to meet the demand, the customers will over-buy, for fear that if they don't buy today, they will not be able to get any more for a while. Once the brewer ramps up, those fears are allayed, people will go into normal buying patterns and the shitlords will disappear.

With Parish, there is no equilibrium, yet. People know that it will be a while before Parish brews another batch of GitM, so they snap up as much as they can to ride out the dry times. If they are putting out a new batch every week, then people will stop worrying.
