From someone who played 700+ hours of FIFA 17, in my probably 20 hours or so thus far in 18, the biggest thing I've noticed is how much harder it is to defend, but defensive stats mean a lot now too. I've played shitty teams in the Prem and also teams in the preseason tournament who just would react late regarding marking.
Last year, that never happened. It was always tight and the defenders rotated almost flawlessly for the most part, especially in the penalty area.
Crosses and corners actually work now, regardless of how tall someone is. I've had some free headers because defenders haven't marked me. I've had Aguero win some headers for goals, which never happened in the previous games unless he was completely wide open.
Probably the most noticeable thing for most people is that keepers aren't complete gods in this game. In 17 you could have games with 20 shots on goal and not find the back of the net because they were extremely overpowered.
That's just a few of the gameplay changes I've noticed. I only play manager mode though. So things may be different online.
