I did them in the oven at 275 until they hit 125. I pulled em out and let em rest for 15 minutes and then did the searing outside on that cast iron.
I also threw a tablespoon of butter in the cast iron and let that melt.

Gotcha. Nice job.
I have a similar back patio BTW. Belgium slate reclaimed from a New Orleans location but it's all irregular so when they installed it, took a bit to get all the pieces to fit.

125 is too high try 110 next time for more rare
