Decided to just make one without a recipe and I kinda surprised myself.
Here are the ingredients:
1/2 pound of Tuna
1 small avocado sliced
1 scallion diced
Small amount of sliced Vidalia onion
1/4 cucumber sliced
Soy sauce to taste
Rice wine vinegar to taste
Juice of 1/2 lemon
Sesame seeds to taste
Sriracha to taste
1 cup cooked cold sushi rice
I marinated the fish with the liquids for about 20 minutes then combined everything.

Anyone who visits Hawaii knows foodland poke is the classic.

We make this regularly and make sure you let it marinate at least an hour.
Not as good as Suisan fish market, but that is gold standard
