Use a digital probe meat thermometer and you'll never have another excuse to overcook a piece of meat again.

And I'd recommend a reverse sear if the steaks are thick enough (< 1")

I do use a thermometer.
I guess my concern was 1. is this cut okay to grill and 2. how do I make sure its cooked evenly throughout since its not cut perfectly either (you answered that)
