Decided to thaw out some axis deer round steaks for tonight. My question is: is grilling these cuts the best method?
Because it is so lean and easy to overcook, I was thinking a quick sear on both sides over a scorching hot grill. Then turn the heat down and let them finish cooking on the top rack. I used the same method for a whole axis tenderloin a couple of weekends ago. Turned out perfect (med rare), but that cut was much thicker and rounder.
Any input is appreciated.
And for your troubles.

Use a digital probe meat thermometer and you'll never have another excuse to overcook a piece of meat again.

And I'd recommend a reverse sear if the steaks are thick enough (< 1")
