It seems like Munich would be the best choice. We can go to Frankfurt if we want but, as stated above by another poster, Salzburg is right there. She's not flip flopping on me and thinking about Dublin or Provence though...

Dublin weather would be terrible around Christmas, and you should only go to Provence in the spring or summer. Honestly... I would consider a warmer place that time of year. Consider southern italy, Spain, or Portugal.
Otherwise, the Munich/Salzburg trip would be quite manageable.
