Might be fun to take the ferry across to Peak's Island. Some awesome views looking back at Portland and you could rent bikes or a golf cart to cruise around the island.
Also seconding the recommendation if you are looking for a day trip to Kennebunkport. It's probably 40 minutes away but is an awesome quaint coastal town.
