I think that's a pretty shady thing to do, so if I'm right I'll have lost more respect for Tin Roof. If not, then it's a wash.




Well, not all unintentional souring is bad, if that's the case. Hell, that's how sour beer began in the first place. Whether it's open top wild fermenting vs. critters getting through staves, as long as it sours nicely, then i don't see the problem.

Of course not all unintentional souring is bad. But most is. Definitely try it first and see if it's good, but don't be shocked when it's not. That should be dumped. What part of a sour RIS/Coffee porter/milk stout sounds good? That sounds like a dumper.

But we will see I guess.
