I could argue against this idiotic rule all day, but just to play devils advocate here to try and understand their logic .... I believe it is to protect the road teams, especially the ones that don't charter flights (like we do). It would be unreasonable for a school to have to find 35 plane tickets on such short notice. I'm not sure if it's an NCAA or SEC rule, but imagine the schools with less money really like it because otherwise they would have to shell out some major cash if there is a rain out on the road.

It wouldn't be hard to have contingencies prepared if teams know a Sunday game is possible. And it's not like it would be needed 20 times per year.

I think, in addition to this possibility, it's to keep it "fair" when compared to a normal Friday-Sunday series. Those series would not be pushed back to a Monday game. So, basically you have three days to play three games.

Edit: And they wouldn't push the two guaranteed Thursday-Saturday series (Easter Sunday and end of regular season) back a day for weather, would they?
