I like to take back strap and cut it in 2" slices then pound it thin with a meat tenderizer where it's flat. Slice fresh jalapeño and get some cream cheese. Lay the meat flat, put a jalapeño slice down on the meat, add some cream cheese then roll them up and wrap with bacon and stick two toothpicks through them to hold it all together. Grill over high heat until the bacon is somewhat crispy. That's my favorite way to eat backstrap. Wrapping that bacon around it keeps the meat from drying out. It's like eating a backstrap bacon popper.
