You can't travel at light speed
What if we developed technology allowing us to travel 1 mph below the speed of light? Could we launch an object forward from, or inside the craft at 2 mph?

The same applies. Only massless objects can travel at light speed. An object with mass would require infinite energy to reach light speed.

No, from what the laws of physics tells us, everything in a vehicle moving at close to lightspeed will be slowed down so as to never reach light speed

Velocities don't add up neatly together when you're near the speed of light due to relativity
