It was a weapon's test, and they had no need to destroy the entire planet.

The plot armor was pretty thick on the main cast until they had to be written out, but the characters in this film are slightly above the average rebel soldier. The real answer is just that Star Wars was always considered a kid's film. Stormtrooper's look imposing, but the heroes are never meant to be in any real danger.
