I'm going to buy a Defender 90 in the next little bit if I can find one in decent shape. That's as bare bones as I'd feel safe driving.
My dad had a '71 Bronco when I was a kid. Thing was in great shape. Fully restored. Still felt like a death trap.
There are already companies in the US, UK, and Kangaroo land that make what you're talking about.
