Two things that I use after every time I play are GHS Fast Fret and a Tonegear String Cleaner They have greatly improved string life for me as for as strings rusting. I have oily hands and sweat a decent amount when I play, especially live.
As far as changing strings, that just comes with practice. A winder helps out a great deal as reducing time. One thing that I do on my Paul's is pull all the strings through the stop tail and pull them fairly taught and capo them at the 12th fret. I then pull one out from the capo at a time to feed it through the tuner. I find that cuts down on time too because you aren't searching for the next string one by one to feed through the stop tail, it's already done.
