Where did you buy your Andouille? Did you make it yourself?


If you bought it at a store or a smokehouse there's a 99% chance it's smoked. I don't know of any place that sells "uncooked" andouille. Basically andouille is the same thing as smoked sausage except it's in a bigger casing and they use use bigger grinder holes when grinding it. Otherwise the recipe is the same.
