You're missing the point. Metal spatula, you can push one down, then push another down, etc. it won't keep them flat. Thus, why many restaurants use a burger press. The point is to keep it on it until you flip.

I suggest going to steak and shake, sit at the bar and watch those guys cook thin patties all day using nothing but a spatula. It works.
