So how do these contracts work for the vendors? Are they paid a percentage of sales that's split with the management company? Do they pay some sort of "rent" or other flat fee and the vendors keep sales?

I dont see how this works. MSY is a point destination airport. Unless they plan on Southwest upping its share and making MSY a top 10 focus city there just isnt the traffic to support all this.
