If you stay on site you can reserve your fast passes 60 days prior to arrival, off site is 30 days. You just go online and they link to your account (either your tickets or magic band or whatever). You can't choose specific rides or times though but you can play with the system until you get what you want. Once all 3 are used, you can get 1 more fast pass at a time at certain kiosks throughout the parks.

$1500 should be plenty. If you are staying on site you really just have food to pay for. There's as little or much miscellaneous expenses as you want. Make reservations for your dinners ahead of time and we usually reserve one or two breakfast either. Most recommend eating as you go so you are flexible, instead of making a reservation for lunch and ending up on the other side of the park having to walk there.
