Probably a dumb question, but when doing IF how important is always getting all of your calories in the window? For instance, I usually do all my eating in my 8-9 hour window but will drink beer late a night or two a week.

As long as the beer fits within your caloric limit, I wouldn't stress over it. The science behind IF is widely debated, so I won't try to steer you either way. Based on what I've personally gathered, IF is a means to staying under your calorie limit without restricting too much what/how much you eat. Instead, you are only restricting when you eat.
I don't really buy into IF increasing your "fat burning hormones", though plenty of people do, but I think it is a great too for staying under your calories, which in turn means losing weight.
