I've been to Europe 3 times and while the idea of traveling all over is idealistically awesome, the reality is its not.
My recommendation is pick 3-4 places that are fairly close to each other but different countries so you get different experiences. I wouldn't start in London and end in Greece, they are very spread apart. For example Amsterdam, Brugge, paris, and berlin. Or Munich, Salzburg, Switzerland, Northern Italy.
Its very easy to do too much.
Also, I would highly recommend spending a couple days in the country. Think of it like experiencings Louisiana by only seeing New Orleans.

All great suggestions, everyone! Appreciate all the information. Wish we had more time to spend, but it's just not possible. Definitely going to have to pinpoint exactly what we want to check out.
