Stuffed animals are weird. They also have a limited lifespan before they look mangy.
Skull mounts are timeless and classic. You won't find a full deer mount anywhere in my house.
In addition to that, I'm sure that skull mount can be turned into a full at any time. shite you could probably skin out a doe head and use that.
