On-field product has definitely suffered. Too many penalties. No one knows what a catch is anymore. They're trying to define something that can't be defined. It's one of those "you know it when you see it" things.
I still love watching NFL football but they do have some things they need to address.
ETA: Refs are getting better about not automatically throwing a flag when a receiver gets blown up. I think they heard the complaints about that.
ETA2: And they need to stop changing the rules every season. I'm kind of enjoying watching the touchback rule change backfire. For those that aren't aware, touchbacks go out to the 25 now. NFL thought this would encourage more players taking a knee in the end zone. However, Special Teams coordinators are kicking it short and forcing returns because they don't want to give up those 5 yards.

Emmitt Smith concurs with your assessment.
Way too many pelaties.

If they want to deter kick returns, they need to amend the rule. Retirn team downs it in the end zone = ball on 25. Kicking team downs it in the end zone or kicks out the back = ball on 20. That way kicking teams will try to boom it (or sky it and try to pin the other team back) and receiving teams will down it when they can.
