I'm not a big fan of Disney but will definetely add sea world to our itinerary.
We're pretty big disney fans so no such thing as too much Disney
Aquatica at Sea world is cool though.
When you get on board I definitely recommend checking your Navigator (for where the sign up is) and registering for a mixology class. Not only do you get alot of drinks for your money, it's alot of fun. They do wine, liquor and beer tastings as well, but we enjoyed the mixology the best.
Palo and Remy are both awesome options for dinner, but if I had to say which our favorite is, I think Palo brunch is probably the best value.

Wife doesn't want to get fancy so I had to cancel the remy reservation. I was too late for the palo brunch so hopefully when I get on board something opens up but I do have the palo reservation. Also, she doesn't think remy serves adequate vegetarian food, she is on a vegetarian kick.
I honestly though disney did not sell alcohol, maybe it was the casino they lack? Definetely going to do the mixology!
