Universal Studios and then Disney Cruise for mini-vacation. Any suggestions?

It's just me and my lady. Will arrive in Orlando on a Friday, staying at a hotel near universal studios and shopping areas but will be doing Universal, mainly the Harry Potter worlds, all day (for the second time).
Leaving Saturday evening to the holiday inn resort in cape canaveral until Monday morning when we board the ship. Not sure about what we can do Sunday on cape canaveral.
I've planned some Atlantis fun, snorkeling, jet skiing, etc.
Looking for some suggestions on what I may be missing that I could put on the schedule. Thanks

What ports do you have on the cruise?
When are you going to Universal - Friday or Saturday? You aren't there for long, but if you have time, I always enjoy Medieval Times, it's fun.
On Sunday, do the Kennedy Space Center. If you are going soon, you could hit a beach. They also have these casino cruises.
You could also take a drive to Daytona.

MY first suggestion would be to just rent a car and drive to Port Canaveral on embarkation day. Even the earliest port arrival time will give you plenty of time to leave the Orlando area that morning and not waste an evening down near the port.
