you have an old town discovery sport ss150 right?

Yessir - technically mine is an Old Town Predator SS150 but that model was renamed the Discovery Sport 15 sometime in the past couple of years.

Is that pretty stable to stand up and cast in?

For 1 man, it's plenty stable to stand and fish. Two guys with good balance could also stand and fish.

Also looking at Gheenoe's as well.

Fantastic boats. More stable than the Old Towns you're looking at, but also much more difficult to paddle if that's something you think you might ever need to do. Today I was in a small river that was too shallow for my outboard, but in places could be paddled. Just a thought.

If there's a similar alternative out there not mentioned here please let me know.

River Hawk Boats make some boats very similar to Gheenoes from the research I did. There's a handful of other manufacturers making boats like that too.
ETA: Square Stern Canoes - check out this link. It has lots of these types of boats.

Basically I want it to be able to accomodate a small outboard, fit in the back of my truck (I have a bed extender), and be stable enough to stand in.

I load my canoe into my Ranger, with no bed extender, and put the little 2.5hp motor I have just laying in the bottom of the canoe for travel. It's a handful for one man (Canoe is 118#) but I do it. For 2 guys it's a piece of cake. I have stood and fished in it in very shallow water as well as open water with waves - very stable.

ETA: With 2 men and gear, the "Rouganoe" runs 7-8mph with my 2.5hp Merc and needs about 1' of water. If I had a way to jack up the motor or use a shorter shaft, I could run it in about 8" of water or less.
