It's not taking advantage of folks if that is actually their rate. Now, if they increased it then that is one thing. But servpro is in the business of making money, and are traditionally high dollar to deal with. OP, find some help from home depot manual laborers on craigslist. Lots of folks looking for work.

As said I wouldn't worry about a 'licensed contractor' for the demo, there's no codes to follow to demolish something. It's putting it back where you probably need someone licensed and trustworthy. Anybody licensed is going to be over their head in work right now and you can't really afford to wait for them to quote.
In a normal situation $6-7 is criminal but in this type of situation you charge what you can because some people would rather pay someone nationally reputable in one phone call instead of putting in the work to find someone cheaper.
