Saw someone earlier charging a couple of thousand to gut a house.
It's honestly not that difficult of a job. I wouldn't pay very much for it. You can do it with a couple of dudes. Find the beams and then just beat them with a hatchet or something to loosen the sheet rock from the screws then you'll be able to pull it out no problem. You'll have a new sheet every 4 ft up in distance.
Eta - I'm not a contractor. Others will know more than me. I'm just giving info I learned helping people over the last few days.
