I worked there for 11 years. I know exactly what you mean.
I was never impressed with the counter service places outside of the World Showcase in Epcot, which is where I worked.
I really like the Lotus Blossum Cafe although I think they discontinued the Lotus Blossom combo which was fried rice, an egg roll and sweet and sour chicken. It was very good.
I agree with you about the Flame Tree bbq, that place is very good too.
Aside from that, it's the standard frozen fried chicken strips, fries, burgers, etc.
