Portland can give you the city (lots of great restaurants and bars), The mountains (Mt Hood is 75 miles east), and the beach (about 75 miles west). All in the same day, if you want to try that.
Portland is not a clubbing town. Lots of breweries and whiskey bars. Most are on the eclectic side. Restaurants range from tons of food trucks to 5-star places, and everything in between. Many, many wineries close by. You will definitely meet some interesting people, though. You can find some good deals on lodging, or I guess you could just pitch a tent under a bridge...
Women tend to trend towards hipsters or the athletic "girl next door" type. Not many Southern Belle types here.
There is a lot of natural beauty that you don't have to hike to see. Weather is fantastic in the summer.
ETA: Craft beer is huge here, and the craft beer taprooms and breweries are a lot of fun. People are very friendly, and I would recommend going to a few of those and you'll make a lot of friends.
