Here are two things I love to do that the casual Disney visitor doesn't know -
Restaurant: Big River Grille and Brew Works - good food and the brew beer in house.
Attraction: In Epcot - Japan - When you go inside the gift shop, they have a pool where you select an oyster. They culture pearls and you have them mount and make a piece of jewelry. Your girlfriend will probably like this.

If you are into history I'll suggest looking for a particular stone lantern in the Japan pavilion. There are obviously no signs telling about it, but it was a gift to Roy Disney from Emporer Hirohito. Apparently he was a huge Disney fan. I just think its wild that something like that is in WDW.
