of course there is a market
my grandfather ran a butcher shop on east Blvd for fifty years
until the giant supermarkets places like his were where you went to get meat, cut in front of you the way you wanted it
I'd gladly pay double for decent meat that tastes like it's supposed to taste, cut the way I want it
