Why wouldn't you eat it? It's a flat head they do not get flabby and oily like a blue cat. Big flat heats are great to eat.

Those big flatheads are awesome. Granted I've never caught a 90 lber, but I've eaten 40-50 lb ones. Dat belly meat

How far north are you?

I've bbqed 40lb blue cat filets from a 40lb fish. Just like any oily fish, add lemon and fuity peppery flavors.
