Potbelly's airport breakfast blows.
ETA:
There was a Popeye's in Lafayette that was open for breakfast, I think maybe the one with the buffet. I don't remember if they ever did anything besides biscuits but that's all I ever remember getting.

They have some pretty solid random Mexican places in Houston and Dallas airports but I try not to shite myself on long flights.

The one with the buffet used to have blueberry biscuits on the buffet all day.
Not sure if they still do. been a while . They were serious though
