ok so your attendees are already in a hotel
then what I would do is book arnauds, assuming they have the space and your group will fit. this will give you peace of mind that the space you go look at is secured, and will give the attendees a "New Orleans" experience
chef tommy g at arnauds is a friend of mine and he can cook anything especially for a private group. Go over there, look at the room, meet with the salesperson and the chef, and as before be certain you know what the budget is and what kind of experience you want
as I said they know what they are doing there and you'll be in good hands. youll have plenty of time to decide on the menu when you get much closer. They'll require a deposit from you this far out so make sure this is a definite before you sign anything
for small money you can get nice linens rented, maybe some table decor, a three piece jazz band during cocktails, etc. you'll be the center of attention there for a group that size. One last thing, don't book at 175 if you think there's a chance there will be much fewer people. Unless the room is maxed out you'd be better off booking at 150 or so assuming you have room to grow
one other place I would consider is upstairs at the Napoleon house, again assuming that 175 sit down will fit. It's a great room, balconies on Chartres st, and the food is good
don't forget about getting everyone from the Roosevelt to the venue. You can book the small shuttle busses to get people there and I would just leave getting back to their own devices and many people will want to stay out a while
