It breaks down/shreds, but I wouldn't necessarily call it watery. Like any meat in a sauce, though, you would probably want to serve using a slotted spoon.
I use enough chicken to where it isn't swimming, so it isn't quite this liquidy (photo from Google images)

ok cool because I've done crockpot chicken tacos before with another recipe and the meat was so watery everything just fell apart
