Red beans (or any beans) and sausage, just throw in stock, garlic, and onion, a few dashes of angostura bitters. When you get home, take out some of the beans, blend them up, and cook the rice.
Taco soup- Ground meat, taco seasoning, black beans, pinto beans, corn, and stock. When you get home, eat with rice or chips.
Chili- is very easy, can tomatoes, tomato paste, ground meat, stock, chili seasoning (create your own), bean is that is your thing
Roast is the obvious favorite- carrots, potatoes, mushrooms
I've experimented with trying to make gumbo in the crock pot, no great success yet, but I'm close.
