Easiest thing ever:

chicken breasts
packet of taco seasoning
jar of salsa

When you get home, you have shredded chicken taco/nacho meat that is delicious. I do it all the time.

I've actually made this before. I think either you or another poster gave the recipe.

What size jar of salsa? I'm going to give that a go this week. How does it not dry out?

A jar of salsa? Jeez. I just throw a can of chipotles in adobo, fresh lime juice, garlic, and seasonings in a food processor then pour that on top.

Similar recipe, but I like to cook it down in a mix of pineapple juice along with whatever seasonings you choose. Worth a try next time for a different flavor in there.
