It ruins the steak by releasing the juice before you bite into it.

It also should never be cut into while cooking it. You should flip one time using a pair of tongs which don't puncture it. Allow it to sit for a short time afterbyoubtakevit off the grill. It continues to cook for about two minutes. So allow for that cooking time.

this is actually not en vogue these days

constant flip > 1 flip (assuming you're not doing a reverse sear)

You can cut into a steak while cooking it
You can flip multiple times. It's actually encouraged
