French Broad is pretty cool. Eat at Wicked Weed, the lamb burger was fantastic. Check the schedule of the Orange Peel. Awesome music venue about the size of the chimes. The Funkatorium is cool if you dig sours and funky brews. Appelachian Vinter or Buisin are good choices for bottle shops. I would add Burial, Hi-Wire, and Pisgah to the list of brewers you should tour. If you don't mind being super touristy there is a beer tour bus that can take you to a bunch of spots in one day.

I may revisit later with suggestions, but definitely don't do this one. One, it's out of the way. Two, the brewery sucks. Their beer doesn't, but the brewery itself does. I've been a couple times and they had very little of their own beer on, and what they did have was dumb shite like a blonde ale. No thanks.

Agree to these, in addition to the two in the OP. Look into the Funkatorium tour. One of the more interesting beer tours I've been on and you get to taste a great number of their offerings.

For food, I liked Ruhbarb for dinner and Biscuit Head for breakfast. And Wicked Weed.

Place had blown up over the past 5 years. It's like Disneyland for beer geek hipster types. It's fantastic.
