Ok...the test is complete.
my IR thermometer is a Fluke 62 Mini.
I put two pots of water on the stove...one in a very dark pot and the other was a shiny stainless steel pot. both had the same amount of water in them with the burner on high
the temp of the water in the black pot topped out at 210 degrees while at a rolling boil.
the temp of the water in the shiny pot topped out at 206 degrees at a rolling boil
I swapped burners with the pots and got basically the same results at 209 in the dark pot and 206 in the shiny pot
the difference could be due to a small difference in geometry between the pots....but the difference is really insignificant
I think the IR thermometer would work very well for checking oil temp when frying....

Difference is emissivity of the surfaces the IR thermometer is pointed at. Better IR thermometers and thermal cameras allow you to adjust the emissivity value to get a more accurate reading.
