I buy the most lean roast i can find. Place in freezer for maybe half an hour. Trim whatever fat you can and slice whole thing thin. Only thing i use is liquid Allegro and usually marinate overnight. I find with jerky, keeping it simple produces the best results. Hope this helps. Good luck
