Serious response - if you filet and skin them AND cut out the blood line and cook them fresh, preferably that day but at most within two days, they are about as good in my view as redfish. Not as good as trout or flounder but decent. NEVER freeze the filets. Fresh filets dipped in milk and seasoned fish fry and then fried are the best preparation method. But if I can catch trout the blues get thrown back.

A guy I used to work with was from N.J., and he used to talk about how they would go fishing and target bluefish. Bring them home and eat them.

He says that the bluefish caught in the Gulf don't taste the same as the bluefish caught up in the northeast.

I don't know if he is right or not, because I have never eaten bluefish.
