Because for the past couple of years our quarterbacks have had a bad tendency to stare down the primary receiver right from the snap, which is a recipe for interceptions on quick slants.

A quick slant is one of the hardest passes to possibly intercept if not the hardest. If your QB has a strong arm then the only real way its ever intercepted is bad throw or thrown so hard it becomes a tip drill. If they squat the slant then a double move will burn them.
